Marinated Roma Tomatoes
3oz. Olive oil (6 tbsp.)
1oz. Red wine vinegar (2 tbsp.)
2each Garlic cloves, fresh, smashed
1/2oz. Fresh basil, chiffonade (1/4 cup)
1tsp. Kosher salt
1/2tsp. Black pepper, coarse ground
2lbs. Roma tomato slices, 1/4-inch (8 cups)

Brush outer surfaces of 2 bread slices lightly with butter.

Arrange 1 slice of bread, butter side down, on flat work surface; top with 3 slices Grande Sliced Mozzarella Cheese and 8 slices marinated Roma tomatoes. Close with top slice of bread, butter side up.

Grill in a preheated panini grill until bread is golden and cheese is melted.

Diagonal-slice sandwich in half. Serve.

Combine marinade ingredients in half-size hotel pan and whisk to blend; add tomatoes. Cover and chill to hold.
