Margherita Grilled Cheese Sandwich

Margherita Grilled Cheese Sandwich

Yield: One sandwich

Ingredients

  • 2 slices Rustic Italian panini bread slices
  • 3 slices Grande Sliced Mozzarella
  • 3 oz. Marinated Roma Tomatoes (see recipe) (8 slices)
  • 3 needed As Butter, melted slices Grande Sliced Mozzarella

Directions

  1. Brush outer surfaces of 2 bread slices lightly with butter.
  2. Arrange 1 slice of bread, butter side down, on flat work surface; top with 3 slices Grande Sliced Mozzarella Cheese and 8 slices marinated Roma tomatoes. Close with top slice of bread, butter side up.
  3. Grill in a preheated panini grill until bread is golden and cheese is melted.
  4. Diagonal-slice sandwich in half. Serve.

Marinated Roma Tomatoes

Yield: 26 oz. (12 servings)

Ingredients

  • 3 oz. Olive oil (6 tbsp.)
  • 1 oz. Red wine vinegar (2 tbsp.)
  • 2 each Garlic cloves, fresh, smashed
  • 1⁄2 oz. Fresh basil, chiffonade (1/4 cup)
  • 1 tsp. Kosher salt
  • 1⁄2 tsp. Black pepper, coarse ground
  • 2 lbs. Roma tomato slices, 1/4-inch (8 cups)

Directions

  1. Combine marinade ingredients in half-size hotel pan and whisk to blend; add tomatoes. Cover and chill to hold.
  2. Hold at room temperature for service.
