Radicchio Ricotta Salad Cup

Ingredients

  • 1 head Radicchio
  • 1 cup Mesclun
  • 2 tbsp. Extra virgin olive oil
  • 1⁄2 Lemon, juiced
  • 1⁄2 cup Grande Ricotta Prima Dolce®, cut into 1/2" cubes
  • Salt and pepper to taste

Directions

  1. Carefully pull away a full leaf of radicchio.
  2. Cut a second leaf into 1/8” strips and mix in bowl with mesclun, extra virgin olive oil, lemon juice, salt and pepper.
  3. Gently fold in Grande Ricotta Prima Dolce® cubes.
  4. Serve in radicchio leaf.
