Basil Pesto Pasta & Burrata

  1. Cut knot off Burrata and set aside, dice the rest of the Burrata.
  2. Combine 4 oz. Gemelli pasta, 4 oz. basil pesto and Burrata and toss to coat.
  3. Transfer pasta to serving bowl and garnish with the knot of the Burrata and 2 oz. fresh diced tomato.

Basil Pesto

  1. Place basil, garlic and pine nuts into a blender.
  2. Add olive oil to blender and blend until a well blended puree.
  3. Add in parmesan and butter, season to taste.
