Basil Pesto Pasta & Burrata

Cut knot off Burrata and set aside, dice the rest of the Burrata.

Combine 4 oz. Gemelli pasta, 4 oz. basil pesto and Burrata and toss to coat.

Transfer pasta to serving bowl and garnish with the knot of the Burrata and 2 oz. fresh diced tomato.
Basil Pesto

Place basil, garlic and pine nuts into a blender.

Add olive oil to blender and blend until a well blended puree.

Add in parmesan and butter, season to taste.
