Basil Pesto Pasta & Burrata

Yield: One serving

Ingredients

  • 1 Grande Burrata ball
  • 4 oz. Basil Pesto (see recipe)
  • 4 oz. Gemelli pasta, cooked al dente
  • 2 oz. Fresh plum tomato, diced

Directions

  1. Cut knot off Burrata and set aside, dice the rest of the Burrata.
  2. Combine 4 oz. Gemelli pasta, 4 oz. basil pesto and Burrata and toss to coat.
  3. ransfer pasta to serving bowl and garnish with the knot of the Burrata and 2 oz. fresh diced tomato.

Basil Pesto

Yield: 40 oz.

Ingredients

  • 1 lb. Basil
  • 6 Cloves garlic, peeled
  • 3⁄4 cup Extra virgin olive oil
  • 2 oz. Pine nuts, toasted
  • 2 oz. Butter, unsalted
  • 4 oz. Grande Parmesan, grated

Directions

  1. Place basil, garlic and pine nuts into a blender.
  2. Add olive oil to blender and blend until a well blended puree.
  3. Add in parmesan and butter, season to taste.
