Ingredients
Chipotle Bacon Yield: One 14” Pizza
- 14 oz. Pizza dough ball, slacked
- 3 oz. Chipotle Bacon Aioli (see recipe)
- 10 oz. Grande Fumella Smoked Mozzarella
- 6 oz. Chorizo, crumbled
- Cilantro, finely chopped, to finish
Directions
Chipotle Bacon
- Stretch pizza dough to 14” round.
- Spread 3 oz. chipotle bacon aioli evenly over pizza dough, top with 10 oz. Grande Fumella and 6 oz. Chorizo.
- Bake at 500°F for 8 to 10 minutes or until cheese is melted and crust is golden.
- Remove pizza from oven and finish with cilantro. Cut into slices and serve.

Chipotle Bacon Aioli
- 1/2 lbs. Bacon, cooked
- 12 oz. (1 can) Chipotle Peppers in Adobo Sauce
- 2 cups Mayonnaise
- 2 tsp. Salt
Directions
Chipotle Bacon Aioli
- Combine 1/2 lbs. bacon, 12 oz. Chipotle peppers and puree.
- Add 2 cups Mayonnaise and 2 tsp. salt and puree until smooth.
- Store in squeeze bottle or sealed container.
