Potato Sicilian Pie

Ingredients

  • 31 oz. Pizza dough ball, slacked
  • 8 oz. Grande Fumella Smoked Mozzarella
  • 3 oz. Grande Ricotta Sopraffina
  • 4 oz. Potatoes, sliced and baked
  • 3 oz. Speck
  • Calabrian chilies, to taste
  • Thyme, to taste

Directions

  1. On a lightly oiled surface, stretch the dough and transfer to an oiled Sicilian pan.
  2. Let the dough rest for 30 minutes, then stretch again making sure to cover the pan with dough.
  3. Bake crust in pan at 500°F for 9 minutes.
  4. Remove from oven, top with 8 oz. Grande Fumella, 4 oz. sliced potatoes and 3 oz Grande Ricotta Sopraffina.
  5. Bake for an additional 8 minutes or until dough is golden brown.
  6. Remove from oven, cut into slices and top with 3 oz. speck, Calabrian chilies and thyme.
