Amatriciana Sicilian Pie

Ingredients

  • 31 oz. Pizza dough ball, slacked
  • 6 oz. Tomato sauce
  • 8 oz. Grande East Coast Blend
  • 2.5 oz. Guanciale, sauteed
  • Calabrian chilies, to taste
  • Grande Romano, grated, to taste
  • Olive oil, to taste
  • Basil, to taste

Directions

  1. On a lightly oiled surface, stretch the dough and transfer to an oiled Sicilian pan.
  2. Let the dough rest for 30 minutes, then stretch again making sure to cover the pan with dough.
  3. Add 2 oz. of tomato sauce to dough and bake crust in pan at 500°F for 9 minutes.
  4. Remove from oven, top with 4oz. Tomato sauce, 8 oz. Grande East Coast Blend and 2.5 oz. guanciale
  5. Bake for an additional 8 minutes or until dough is golden brown.
  6. Remove from oven, cut into slices and top with Calabrian chilies, Grande grated Romano, olive oil and basil.
