Buffalo Chicken Pinwheel

Ingredients

  • 17 oz. Pizza dough ball, slacked
  • 8 oz. Grande Mozzarella Cheddar Blend
  • 7 oz. Chicken, grilled
  • 1 oz. Grande Parmesan, grated
  • 2 oz. Buffalo sauce
  • Grande Parmesan, shaved, to taste
  • Chives, to taste

Directions

  1. On a lightly oiled surface, stretch pizza dough to approximately 13” x 13” x 2mm thick.
  2. Spread 8 oz. Grande Mozzarella Cheddar Blend over the dough, 1/4” from the edge.
  3. Top with 7 oz. Chicken and drizzle with 2 oz. buffalo sauce and 1 oz. Grande Parmesan, grated.
  4. Roll the dough on itself making sure to seal the seam.
  5. Slice the roll into six 1.5” pieces.
  6. On a pizza pan covered with parchment paper, arrange the pinwheels, slightly pressing them to make them wider and shorter to allow for better cooking throughout the layers.
  7. Bake at 500°F for approximately 9 minutes or until the dough is golden brown.
  8. Top pinwheels with 2 oz. buffalo sauce, chives and Grande shaved Parmesan.
